I made these guys for a pre-gaming Super Bowl Breakfast and served them with Bloody Mary’s!
Here is what you will need
1 12 cup muffin tin
12 – 18 slices of bacon
1/4 cup butter (optional, however they make for a richer more flavorful scramble)
1 cup of shredded cheese ( your choice)
Himalayan Sea Salt
1 cup spinach leaves (optional)
First spray cooking spray in the muffin tins. Next line each tin with a strip or two if need be of bacon. In a bowl, mix up the eggs, butter, salt and pepper (here you can add other spices if you choose)
Put the spinach at the bottom of the tin if you’re using it, then pour the egg mixture in the cup, (not to the top) then sprinkle cheese on top.
Bake at 350 for 30 -35 minutes or until your bacon is cooked the way you like! If you want you could always precook the bacon in the tins a bit first before pouring in the egg mixture if you like really crispy bacon!
Once they are done they are easy to remove and set on a paper towel to drain any excess grease.
I am telling you your family will love these little guys. Easy to grab and run with out the door an were even good the next day heated up!
