After a crazy long day of running around we got home starving and truly ready to eat anything in sight. I told my husband, just leave me alone in the kitchen for 20 minutes and I will come up with something!
Looking through the fridge I was pondering……. then I realized I still had half the loaf of french bread from last nights dinner, Inspiration!
Here’s what I used;
- 2 left over best baked potatoes ever ,
- 4 pieces of bacon cut up before cooking
- 2 cups of fresh kale cut up
- chopped olives
- 1 large or two small mushrooms sliced
- half a loaf of french bread sliced down the middle
- garlic salt
- parmesean cheese
- shredded cheese
- 2 eggs
- 1 jalepeno sliced up ( I leave the seeds in because we like it spicy)
I started off browning the bacon, then added the potatoes to get browned as well
Then I added in the kale and mushrooms and jalepeno.
(Already the smell was AWESOME!)
Next I took the french bread and buttered both sides and sprinkled on the garlic salt and Parmesean cheese.
I layed the bread on a baking sheet and spread the whole mixture on top leaving a little indent in the center of each.
Next I cracked an egg into each indent, and sprinkled with cheese.
Popped in the oven at 375* for about 10 minutes, then switched to LO broil until the eggs were cooked and the cheese nice and melted!
I made a quick Salsa to serve with it as well!
1 half avocado ( I used a calavo)
1 roma tomoto
1/2 a peeled cucumber
Sprinkle of himalayan sea salt.
Dinner is served!
