Okay on the heels of the best baked potatoes what next but Baked Potato soup!
One of my goals as I have said before is to make life as easy as possible! Using the least amount and most common ingredients most of us already have in the house. While still keeping thing s healthy and inexpensive:)
Here are the ingredients I used:
Start with three or four left over baked potatoes
Cut them into cubes
Pour the soup and both into a sauce pan with one can full of either water or for richer soup milk.
Add the potatoes
Cook the bacon in the mean time. You can cut it and fry it or fry it whole then crumble it in….your choice:)
Cook over medium heat and stir occasionally.
Add in your spices. I love potatoes and rosemary so I added rosemary celery salt and because I LIKE IT SPICY.. Cayenne. It gave it a nice little kick and made it …”not your moms baked potato soup”!
Sprinkle in the bacon and continue to cook. Add pepper if you like and really check before adding any more salt. If you used the recipe from my “Best Baked Potatoes” There is probably plenty.
If you feel it’s a bit thick, you can add more broth, water or milk. For this soup I like mine kind thick and hearty:)
To serve I like to scoop out a little sour cream (fat-free is good! You can use fat-free soup low sodium broth, and fat-free milk for this whole recipe to keep calories down!)
Then sprinkle some cheddar cheese on top and there you have it…the perfect easy quick home-made hearty soup for a chilly fall or winter dinner!
